    I just polished off a massive green salad topped with avocado and hemp hearts, and it's going to be followed by cauliflower "mac" and cheese.

    I had cut up vegetables with low calorie dressing for my post-work snack. Unbeknownst to me those vegetables are what was supposed to be for dinner. So we had sushi.

    Tacos, but I need to buy the ground beef when I go to Sam's Club for some other items. We much prefer the SC 90/10, even over the 93/7 from the grocery store.

    Chile rellenos, sans breading, made with a filling of mozzarella and ricotta, because it's what I had on hand and it was convenient. I'm sure it'll be tasty. Our side is sauteed onions and zucchini, seasoned with cumin, garlic, cayenne pepper, oregano, and lime juice to finish it.

    Tonight's theme is miso: miso soup, marinated tofu stir-fried with portobello mushroom and onion (marinade: miso, mirin, soy sauce, dashi), and miso-glazed eggplant.
