    I also need to do the grocery run, but I'm not tonite so it"s breakfast for dinner. Fried potatoes, bacon and eggs with toast. might even make breakfast cassarole in my cast iron skillet.

    I had to Gooooogle the Waygu, it"s a japanese beef, genetically altered for marbling. bet its delicious, I buy my beef by the quarter or half from a friend that raises cattle. all grass fed, no steriods, hormones, or anti-biotic injections. however its important to me to keep my food pantry stocked. from the look of the picture...I woulda ate that.

    We bought some ground lamb, we were very surprised to find it at our lame-ass local Kroger. My wife has promised to make actual shepherd's pie, not the cottage pie we normally make with ground beef.

    Tonight's dinner will be chili (leftover) and cornbread (fresh from sctratch).

    tonight was smothered pork chops with garlic butter onions, mushroom gravy, broccoli and rice. delicious I love cooking...

    Rendered two slices of Applewood smoked bacon about 3/4 of the way cooked... Removed the bacon from the pan and sautéed some shallot and smashed garlic in the fat. Tossed in quartered brussel sprouts after removing from the heat. Tossed this stuff into a porcelain baking pan with butternut squash, Japanese sweet potatoes, mushrooms, shallots, and onion. Tossed all together with a little more evoo, sea salt, smoked paprika, cracked pepper, and garlic powder. Added one of the slices of bacon, chopped, into the mix. Baked for 50m at 350*...added the other bacon at 20m, and finished the pan at 400* for 10m, then 2m under the broiler. Cooking was wonky because I was also baking two bone-in, skin-on chicken breasts rubbed with a little bacon far and evoo, topped with sea salt, cracked pepper, smoked paprika... you get it. Baked 40m at 350*, finished off for 4m under the broiler to crisp the skin. Much easier than it sounds.

    We had eggplant parm (breaded eggplant with a cheesy red sauce) with a side of spinach. The spinach was cooked with an Italian seasoning herb blend, butter, and a ton of parmesean cheese. It was a good meal.

    Last night was blackeyed peas (chopped bacon, garlic powder, cumin, salt, & pepper) and homemade cornbread (no sugar).

    I've got a lot of cooking to do today for the week ahead. Still trying to figure out just what, but today will probably be lentil soup.

    Trader Joe's black forest, uncured ham wrapped around sheep's milk cheese and cornichons with a squirt of organic yellow mustard. And a skinny monkey pop. Didn't feel like cooking AT ALL.

    Last night was creole pork chops (my wife always bumps up the amount of onion, green bell pepper, & tomatoes) and rice (with a handful of green peas thrown in). Followed by homemade from scratch blackberry crumble topped with artisian vanilla ice cream.
