    Tonight dinner will be tacos. We haven't purchased prepackaged taco seasoning mix in over 20 years.

    1. Place chicken breasts in frying pan, cook until aaalmost ready.
    2. Mix blue cheese with creme fraiche
    3. Cover chicken with cheesy sauce, place in oven until bubbly and chicken fully cooked
    4. Cook rice, or something

    Last night was:

    Whole chicken stuffed with onions & garlic. Cooked in the Crock-Pot with onions, carrots, & leeks. Flavored with salt, pepper, & basil.
    Rice (Basmati brand, good stuff) with a cup of peas thrown in.
    Homemade (nothing prepackaged) apple pie, with caramel vanilla ice cream.

    Last night I made a slow cooker full of taco soup. Pretty easy meal. I did have to actually chop up some peppers and onions as I was out of pepper/onion stirfry mix (my favorite shortcut), but otherwise, it's just peppers, onions, protein (TVP or tofu), black beans, chickpeas, diced tomatoes, tomato paste, and a couple of tablespoons of taco seasoning, as well as some ancho chile powder to round out the flavor. I throw in some corn if I have it. Takes maybe 10 minutes to put together even if I chop the veg.

    Tonight I'm thinking I'll do something with the portobellos I bought last week at Costco.

    I made up a couple of pretty good imitations of Jimmy Johns "unwiches" using romaine and sliced cheeses, ham, and the usual veggies and mayo. I've wrapped them in newspaper. I need to find some good deli paper that I can get in less than case lots.

    Too bad you don't shop at Costco ;) They sell Kabnet Wax paper sheets. You might also try looking to see if your town has a cash'n'carry.

    Thanks for the tip. I googled the Kabnet brand and found them at Sam's Club, about 2 miles away, for $12.28/1000 box.

    Tonight we had old fashioned beef roast cooked with potatoes & carrots, seasoned with onion soup mix. My wife did yorkshire puddings, which are kind of hard to describe, think chewy semi-hollow biscuits.

    Desert will be homemade oatmeal raisin spice cookies, with a choice of coffee or blueberry cheesecake ice cream.

    Roasted prime rib beef, au jus, Yorkshire pudding, mashed potatoes, green beans, corn on the cob, lots of creamy horseradish, a cheap cabernet, and then a bunch of Neopolitan icecream crepes.

    yes, a very Canadian style traditional dinner for 5.

    Reheated mushroom, beef, kale/chard soup from the other night... made the bone broth from scratch, too. Had that perfect jelly consistency when refrigerated.
    Served it with some sweet potato starch vermicelli, which looks like clear noodles.

    And two skinny monkey popsicles.
    With a chocolate covered raspberry (Young's Double Chocolate Stout with a floater of Lindeman's Framboise Lambic)
    I had much paperwork... needed fortification. Not much vision in left eye again... bring it, migraine. I can take it now!
