Food What's For Dinner Tonight?

    Texans make a dry smoked venison sausage. It works well with the leaner meats... I've had a pork version, too. They smoke it until it's almost crumbly. I've had it atop salad, sliced on top of a burger, and just snacky - style to gnaw on. It's a thing.
    I think it might be like a version of hard-tack or something. You're right, it's super salty. Almost salt-cured tasting.

    Nope. It was called smoked sausage at both places where I've gotten it.

    Cajun goodness. The place is closed three days a week because the owner/chef drives halfway to Louisiana every week, where he meets a vendor from LA to pick up all his fresh gator, turtle, crawfish, shrimp, sausage, catfish, etc.

    Great stuff.

    I've done beef brisquet on my basic grill/smoker. Today I going to try a beef roast using homemade marinade/mop, along with foil-wrapped onions, which we both really like. My wife is going to do spicy potato salad.

    Pro tip for the roast.

    Crank up the heat as hot as you can get it. Sear each side for 60-120 seconds (depending on roast size). Then turn the heat way down around 300* and finish till the beef is 125-130* in the center. Foil tent it (after taking it off the grill) and let it rest 10-15 mins before cutting.


    Also, be sure to pull it out of the fridge 3-4 hours before cooking. Enjoy. :)

    Yesterday when I went to Fiesta to restock our produce my wife suggested that I get some Granny Smith apples because she "might cook" an apple pie. I did, & we/she did. BTW, she does crusts from scratch as well.

    The apple pie recipe she follows only calls for one cup of sugar (that's a whole lot less sugar than what's used in most store bought APs). She substituted 1/2 cup brown sugar for 1/2 cup regular granulated sugar. It gives the pie a great taste, but it does alter the color of the filling.

    From scratch is the only way to go. I dislike the texture of most store bakery crusts, and honestly, it's not that hard to make pie dough is you have either a food processor or a stand mixer.

    Now I want to make a pie.

    She asked, "Should I do a single or double crust?" I immediately replied, "Double." To make it even better, she did ruff puff pastry.

    Might I suggest a cherry pie?
