Last night was breakfast: Bacon, eggs, toast, & hot tea. I was so focused on getting the car running long enough to get it to the deaership, and completing two sets of taxes, I would've eaten a can of dog food without complaining.

Tonight I had thai food with @lish and @ponypotato . Hopefully lish will post a pic or 2. Green chicken curry wasn't spicy enough. The lemongrass chicken was tasty and the barramundi curry was pretty good. Not as good as the company

One of my favorite things to do on social networking sights is share the recipe for what I'm cooking for dinner that day. Thought we could all do that here as a fun way to share recipes.
@magpie, one of the things I love to do is cook. From the time I was 4yrs.old, my Mom said, "As long as you're going to be under foot in the kitchen, you might as well get a bowl and spoon of your own!" She had no idea what she started with me.

Here is one of my own simple side dishes that I make. Most people probably shy away from many root veggies because they are too strong, too bland, too slimy, whatever. See what you guys think?

GINGERED PARSNIPS
1 lb. bag parsnips, washed, pared for imperfections, tops and ends lopped off, but never peeled! - Slice or dice into nice chunks
2-fingers of fresh Ginger, washed, and pared. Then peel gently with a spoon, or leave skins on- then dice into tiny pieces.
1- heaping Tbsp. Turbonado (natural) sugar
1/4 tsp. ground Nutmeg, or freshly ground nutmeg.
1- tsp. organic butter
1- organic Lime, juice and zest
1- organic Lemon, juice and zest
Combine all in a saucepan. Cover. Bring to a slow simmer, stirring now and then. When tender; about 10-12 min. it's ready to serve.
Leftovers can be added to soups, or stews, even smoothies.Lots of possibilities.
As a variation, I've added sliced carrots to the mix. but not in same quantity as parsnips.

To get things started here are the recipes I used for our meals this weekend.

Saturday
Iowa Corn Casserole

Ingredients:

1 package frozen corn kernels, thawed

1/2 cup heavy cream

1/2 teaspoon salt

1 tablespoon granulated sugar

1/8 teaspoon freshly ground black pepper

1 tablespoon butter

1/2 cup whole milk

1 tablespoon all-purpose flour

2 tablespoons freshly grated Parmesan cheese

4 slices of bacon, diced

1/2 cups

bread crumb

1 chopped green pepper

1/4 cup finely chopped onion

Directions:

In a pot over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted

In a skillet, fry the bacon until lightly browned. Remove and set aside. Pour 1/8 to 1/4 cup of bacon drippings over bread crumbs; set aside. Reserve 2 tablespoons drippings; saute green pepper and onion in reserved drippings until tender. Stir in the cream corn mixture, bacon and half of bread crumbs.

Spoon into a baking dish; sprinkle with remaining crumbs. Bake, uncovered, at 350° for 20-25 minutes or until bubbly. Yield: 4 servings

Sunday
Cheesy Onion Casserole

Ingredients:

1 large sweet white onions, sliced

2 tablespoons butter

1 cups shredded Swiss cheese,

Pepper to taste

1 can condensed cream of chicken soup, undiluted

2/3 cup milk

1 teaspoon soy sauce

4 slices French bread, buttered on both sides

Directions:

In a skillet, saute onions in butter until transparent and slightly browned. Layer onions, two-thirds of the cheese and the pepper in a baking dish.

In a small saucepan, combine the soup, milk and soy sauce until blended; heat through. Pour over casserole and stir gently. Top with bread slices.

Bake, uncovered, at 350° for 15 minutes. Press bread slices down under sauce; sprinkle with remaining cheese. Bake 15 minutes longer. Yield: 2-4 servings.

Martin and I have just finished eating this recipe. It turned out to be 2 servings to us. It definitely wasn't enough for us. I suggest serving this as a side dish or doubling the recipe. However it was Delicious.

Matzo Brei,
Break up matzo into bite size pieces, into a bowl, put some water in the bowl swish it around for a half minute....no more...pour out the water,
2 (or more) eggs beaten in a bowl, add the matzo, a bit of butter in a frying pan till the butter sizzles, pour in the matzo/egg mix, fry till it "sets" then serve with preserves or maple syrup.....

For dinner at my sister's this afternoon:

Broccoli & cauliflower & cheese casserole. First time we tried the recipe, we'll see how it turns out. We substituted cheddar & mozzarella for American or Swiss cheese. It's going to be saltier & stringier.

Sour cream coffee cake with brown sugar streusel. Our second time cooking this, it took us 40-45 minutes to prep it. Once I re-write the recipe so that it's easier to follow, I'll post it here (I've previously posted that the recipe from our America's Test Kitchen cookbook is hard to follow).

Something take out if the Whole Foods in Baton Rouge is still open by the time I get there. The one I stopped at in Tallahassee was open until 6 tonight. But, Louisiana is a different animal.
