Food What's For Dinner Tonight?

    Last night was breakfast: Bacon, eggs, toast, & hot tea. I was so focused on getting the car running long enough to get it to the deaership, and completing two sets of taxes, I would've eaten a can of dog food without complaining.

    Last night was a Chinese food buffet, sort of a post-tax celebration dinner.

    Something with matzoh in it and the same with dinner tomorrow and the day after that and the day after that.

    Matzo Brei,
    Break up matzo into bite size pieces, into a bowl, put some water in the bowl swish it around for a half minute....no more...pour out the water,
    2 (or more) eggs beaten in a bowl, add the matzo, a bit of butter in a frying pan till the butter sizzles, pour in the matzo/egg mix, fry till it "sets" then serve with preserves or maple syrup.....

    Wild game jalapeno & cheese sausage, leftover oven roasted potatoes, & carrots.

    My MIL brought over some pancakes made with matzo flour and some kosher for Passover syrup.

    Cooked some good old fashioned burgers on the grill tonight. Sometimes, simple pleasures are the best. :)

    Wild caught Salmon with Almondine sauce, Shoepeg corn and some surprisingly good frozen veg mix....

    For dinner at my sister's this afternoon:

    Broccoli & cauliflower & cheese casserole. First time we tried the recipe, we'll see how it turns out. We substituted cheddar & mozzarella for American or Swiss cheese. It's going to be saltier & stringier.

    Sour cream coffee cake with brown sugar streusel. Our second time cooking this, it took us 40-45 minutes to prep it. Once I re-write the recipe so that it's easier to follow, I'll post it here (I've previously posted that the recipe from our America's Test Kitchen cookbook is hard to follow).

    Something take out if the Whole Foods in Baton Rouge is still open by the time I get there. The one I stopped at in Tallahassee was open until 6 tonight. But, Louisiana is a different animal.
