    Last night was DiGiorno Rising Crust Supreme pizza.

    Which I 'doctored' with garlic powder, extra onion, extra green & red bell peppers, mushrooms, & extra mozarella cheese. Added crushed red pepper (cayenne) and parmesan cheeese after it cooked.

    I'm not proud, but it was tasty--we had Dominos for dinner last night. Frankly, they're the fastest pizza place in town, and their quality is pretty good. I know I am always going to get the same pizza. I like that I can order with an app, and pay less than $15 for dinner delivered to my door.

    I think that somebody in the meat department was having a good day. Just think it it had been labelled
    Boned Stuffed Butt Whole, or Boned Butt Whole.

    Sometimes I find cuts of meat priced way too low (usually just one, which raises even more suspicions), or put in the Reduced Price bin well before the Sell By date. Hmmm.

    Tonight's dinner will be 90/10 ground beef, done as patties. I paln to mix the meat with garlic, worcestershire sauce, & soy sauce. I'll stuff the middle with chopped onion. At the end of the cook time I'll top them with some crumbled blue cheese. The sides I haven't yet decided.

    Along that line of thinking, what are some of your favorite recipes for quick & tasty burger patties, or GB in general?

    Leftovers. I made these today.

    Mushroom, shallot, leek, chard, broccoli, and a little poblano paleo quiche bites.

    Both are gluten-free and dairy-free, I left the mini quiches that had some parmesan in them at the baby shower.

    I started with this recipe: Mushroom Onion Quiche Bites Food and Fitness Adventures | Grok Grub
    But it was a vegtarian that requested them, so I
    • Omitted the chicken
    • Used 2 shallots and the white part of one leek
    • Added swiss chard, a little poblano and a little steamed broccoli (cut up tiny)
    • Added Parmesan (only to half, for the cheese, since nothing in the Bayou is made without cheese)

    Green thai chicken and veg curry.
    One of my favorite fast meals. I usually use red curry paste, but I thought I'd branch out a little.
    It was a good decision, though I ended up using the whole jar of paste, ha ha!

    Ha ha. I just really like cooking and paleo is a new challenge, to balance out my blocks appropriately. Google is my recipe box.

    This is the base recipe Thai Curry Chicken | Award-Winning Paleo Recipes | Nom Nom Paleo

    I don't use the kabocha squash... since the Louisianan and Texan grocery stores looked at me like I was an alien when I asked if they had any.
    I also don't use frozen veg. This time I julienned a carrot, half of a zucchini, and half of a crook-neck squash,
    used the white part of one leek, and half an onion, thinly sliced. I used two chicken breasts this time, too.
    The Taste of Thai curry pastes were the only ones I could find.
    For the green curry, I used a whole can of coconut milk (since I was using a lot more veg and I like it saucy)
    and ended up using about 7 T of curry paste, adding red chili flakes to taste.
    Red curry I used about 5 or 6 T of curry paste and the whole can of coconut milk.
    It's important to put the curry paste in with the chicken and onions and let it cook like the recipe says to get that lovely curry flavor opened up.
    I've also done this with chicken and shrimp, lightly cooking the shrimp 1 minute per side in a skillet and a little oil, then putting it in the curry
    when I've added the coconut milk and vegetables... just make sure they're submerged in the sauce or they'll finish funny. :)

    Mmmm, curry. We use these pastes: Welcome to Thai and True - Bring home the Thai! They ship! The jars are a pretty good size, too, so we usually get several curries out of one. @noodle's method above works with tofu, too, and she's right that the critical piece is allowing the curry paste to heat up and release those aromatics. We probably eat Thai curry at home once a week or so, especially since I can buy a jar of paste for less than I'd pay for curry at a restaurant. If I'm going out for Thai, it's not going to be for curry! ;)

    Tonight I had thai food with @lish and @ponypotato . Hopefully lish will post a pic or 2. Green chicken curry wasn't spicy enough. The lemongrass chicken was tasty and the barramundi curry was pretty good. Not as good as the company :)
