Perhaps some kitchen faucets wide open can run 2.5 gpm, but I just right now checked mine and going full tilt it took 36 seconds to fill a gallon milk jug.
    Which is only 1.67 gpm.
And no one would run the water full blast to wash dishes. I only open the tap wide if I'm filling a stockpot or water jug.
I generally wash large pots and pans and glass glasses by hand. I'll do a little research on how much I actually use when washing dishes.

I wonder if the 2.5 gpm figure comes from the dishwasher industry. Hmmmm.

I basically use no water at all. I just use paper plates and Styrofoam cups. Throw that shit away, I waste no water. And it saves time.

I am waiting for my stillsuit so I can reclaim all of my precious bodily fluids.

(By the way, where is @Fremen, it's about time he read Dune so can understand the humour of this post.)

On the one hand I appreciate the value of not wasting water, and not getting screwed on your water bill.... on the other hand every low flow appliance I've ever used has sucked so much that it probably wasted more water than the original. Our current low flow toilets almost always have a slow leak or don't return fully and just keep flushing forever, others I've used take multiple flushes to do the job of one normal flush. And every low flow showerhead I've used could barely rinse soap off of me let alone deal with the thicket of steel wires I call hair.

Plus long hot showers are my vice.

The trick is to have enough dishes/silverware that you can last until the dishwasher's full without needing to wash anything.

I've always found it interesting how the biggest problem with a stillsuit isn't the reclamation technology but the thermodynamic implications.

And it's too late for your precious bodily fluids, we've already fluoridated them.

When I replaced my water heater 12 yrs ago, the technology just wasn't there, yet. I don't remember why, size maybe?

While most of my water using appliances are water saving, it probably makes no difference where I live. Water comes from a 400' deep hole on the north side of the house. Waste water goes into a shallow hole 200' downhill on the south side of the house. I'm not sure moving it the length of a football field matters much.

Nope--it came from several different websites.
