    I made my wonderful meatloaf recipe. It's not really mine, but well I make it and wife loves it. She requested it the other week and this week I finally got all the ingredients, not that it's crazy ingredients, but well I want good meat which meant going to the butcher instead of the grocery store.

    I tried a "quick" nuked meatloaf...and it was just inedible. Whaaa :oops:
    And restaurant versions just have been "meh" in the past year.

    Ok, I'm going to do it home made...it's been awhile with meatloaf...but I'm craving it.

    Beef In The House from my favorite Thai restaurant Siam Cuisine.
    Comes with a stack of romaine lettuce leaves to make your own wraps and three sauces, peanut, sweet&sour, and hot chili.
    The beef is thin slices of lean beef cooked in a garlic sauce with shiitake mushrooms.
    It comes with pickled cucumbers, slices of tomato, green onion, rice noodles, chopped peanuts, and cilantro to build your wrap.

    My mother made mean meat loaf. As a kid I thought the bacon slices on the top made it special.

    My wife and combine our efforts to make meatloaf. We spice it up a lot more than mom did, but still include the bacon slices.

    This is the recipe that I made. I used 3lbs of meat, 1.5lbs of beef, 1.5lbs of pork, and doubled everything else. All beef it can get dry and hard, so usually it's addition of pork, veal, or turkey.

    I’ll make it up this week
    Going back to normal home cooking now.

    Finished off my vacation with hot wings and pizza
    But I didn’t want to cook or sit outside, too hot.
    Sweating after a miles of walking thru the bay marsh trails around here. (Very quiet...Zen like)

    Eggplant parmesan, and sauteed asparagus.

    I much prefer my sauce over store bought (no meat, too much sodium, sugar, and oil). If I "cheat" I prefer Newmans Own.

    One of my favorite local restaurants, just two blocks from my house, had the go-to bangin' adult milkshakes. The word on the street was that they'd closed permanently at the start of the pandemic... but I've heard more recent murmurs that they might be coming back.

    To give you an idea as to how much... I called my sister and asked if she had grandma's cookbook. A few years before she died someone sat with her and took down recipes from her. She didn't cook with a recipe book. She cooked via memory and taste.

    My sister emailed me 127 Word documents. LOL

    I took them and turned them into 1 PDF and sent it back to her.
