    I think this is where me & my wife diverge from your typical Jewish couple.
    We love our food...including pork, meat/cheese/milk combos...and especially bacon. (although we are good during the High Holidays)

    We joke and have found Jews for Bacon.
    Go to the store...great stuff there...although I'm not sure about the thong...

    One of my favorites, compliments of my mother & grandmother...

    Chicken Livers (these are pleasantly cheap...$2)
    Soak them in milk for awhile (this draws out the bitterness)
    Cut them into reasonable sizes, wrap them in bacon...and set them on a baking pan. (you might need a toothpick to skewer them and hold all in place)
    Bake briefly on 350 (around 20 minutes...they cook very quick, keep an eye on them)

    Personally I love them with a bit of Ketchup. :)

    hmm, how about this? maybe like poppers...you also put a bit of cheese in there with them...not sure.

    But one thing to remember, the chicken livers are a stronger taste...not bad, just not subtle.
    So I don't know if the strength of the livers would be a match with the strength of the jalapeno. (Cheese & bacon are just a bonus)
    You'll have to experiment...but I wouldn't mind being a guinea pig for that trial. :D

    I've made stuffed peppers where I marinated a water chestnut in a brown sugar+water slurry, stuffed the chestnut in, then cream cheese after that. Then wrapped them in bacon and baked them.
    I've never made actual poppers with cheddar cheese and a breading, though.
    I've made fried chicken livers and gizzards, so making the livers and cheese stuffed peppers wrapped in bacon shouldn't be too hard.
    But, would cheddar be better, or would cream cheese?

    Decisions, decisions...that's hard to do when drool is coming out your mouth.
    I'd think cheddar though.
    I think the cream cheese would be overwhelmed by both strong distinct tastes.
    The cheddar would add that certain something and compliment both a bit more. (especially if it's sharp)

    Would be good to test both out though, just to be sure... ;)

    Just out of curiousity, what do you think about Monterey Jack? (they already mix it with Jalapeno for Pepper Jack)

    And to keep on topic, you could use a brown sugar bacon, to keep in lines with your other recipe you've tried.

    I love Monterey Jack and Pepper Jack. Mostly I mix them with Colby Cheddar for my Mexican dishes, though I suppose they would be great in these appetizers, as well.

    My mom was telling me just now about her visit with my sister, who had taken cocktail weenies and wrapped bacon around them, then rolled it in brown sugar.
    She said they were delicious. I was envious. :D

    I didn't know they made a brown sugar bacon. How?

    Years ago, I knew a jewish woman who put bacon into her chopped liver. She didn't tell anyone in the family, and they were all in blissful ignorance, but they loved it.

    Individually her sons and her husband all told me (over a long time span) that they knew but didn't want to let on in case she was ashamed and stopped it. Each of them thought that they were the only one that knew...
