    last night's dinner was epic. Roasted Bacon wrapped chicken breasts stuffed with breakfast sausages. This may be the third time that we have eaten this as a family. Always a favourite. I have a picture somewhere, of it.

    What temp/how long to get the sausage done without overcooking everything else?

    I used thawed breakfast sausages in those pictures (from last time). Last night I didn't take pictures, but I used cooked sausages (the same kind) that were frozen. so I microwaved them and then put them in.

    The result was the same, but as they were pork they need to be cooked to pork temperature.

    in the oven for 45 mins at 365 degrees F.

    You have the option to brown the bacon wrapped chicken prior to roasting but, as you can see, I didn't and it still turned out crispy. Turning on the broiler in the last 5 mins helped with that.

    I also microwaved the potatoes to cook them a bit (about 5 mins) before putting them in to roast as they tend to undercook if put in raw. Also added about 10 whole cloves of garlic to roast along with the veggies. Nothing like roasted garlic cloves.

    Cool, thanks for the info. I may have to steal that basic idea and retry it myself. Though I'd probably do it on the BGE. Looks tasty.

    I have some amazingly good applewood thick cut bacon that is about to become a dessert. I'm cooking it until its just crisp and fully draining it, and then crumbling it. It will be stirred into some 70% ghirardelli chocolate and spooned onto wax paper to cool. Just before its done cooling I'm sprinkling on some hickory smoked salt to top them. I've made them before and they are amazing.

    And quite the low salt, low cholesterol dish!:eek:

    Bacon wrapped chicken breasts with sausage on the side is what I made last night for my mum's and my premature Christmas dinner.

    wyopen ... are those just the breasts you're going to wrap, or more? I'm not familiar with 'game hens' :)

    Can't miss as long as you don't overcook the hens. They can go from perfect to overdone rather quickly because of how small they are.

    Soon as I get through my morning mail and messages, it's time for me to make 2 sheets of candied bacon. Need 12 strips for Bacon Butterscotch Oatmeal Cookies, then some leftover for noshing and drink garnishes.

    Had some spinach quiche and a potato casserole today. Both were made better by the presence of bacon. Oh yeah

    My second favorite woman gave me bacon syrup for Christmas.
    I am sorry to report that a bacon old fashioned made with it was... Unpleasant. I have High hopes, though, for a Maple/Bacon Manhattan (Which I guess would be a Berlington).
