Food Potluck Wedding

    A nice 7-layer dip would be easy and filling. I like the idea of multi-colored chips mentioned up-thread by CinnamonGirl, too.

    My mom made a cold black-eyed pea salad that sounds a lot like the wild rice salad noodle talked about, just had no wild rice or edamame, and had green peppers along with the yellow peppers, and also corn.

    Why is it odd? It's pretty normal among my extended family. It used to be THE norm. The wedding industry wants us to believe we all need caterers.

    My wife has made this a few times - pretty simple to make, really tasty and a little outside the norm:

    Cob Salad of Corn, Avocado & Tomato with Basil Oil - Quick and Easy Recipes, Organic Food Recipes, New Zealand Cooking Recipes - Annabel Langbein

    We tend to use mini tomatoes cut in half rather than bigger tomatoes and also use pesto rather than the basil oil.
