Food I'm so hungry, I could eat a horse

    When I think of horse-slaughter and eating I think of the story my dad told me about cows. (I have no other livestock stories that have resonated with me on a personal level.) When Dad was putting himself through uni back in th 1950's he worked at an Ontario slaughterhouse. This is how they conducted the slaughter. Cows were queued up. My Dad struck the next cow in line over the head with a mallet, stunning it. The next guy slit the cows throat so it bled out and died, then it was sent along for further prepping for sale as food. My dad is not a sentimental type but that hands-on slaughter gave him a healthy respect for livestock. That's about all I can say. Despite being brought up to eat domestic animals, I feel strongly that just because we can abuse them doesn't mean it is right or necessary. Humane slaughter is a moral imperative. If you eat the slaughtered horse, that is a personal choice.

    I love the Native American tradition of giving thanks and expressing gratitude to the animal spirit for providing them with its meat.

    I think we are too detached from the poor beasts that are sacrificed for our survival.

    The terms we use enable us to maintain this detachment. Beef, so named by all of its various cuts instead of cow or steer. Pork, ham, gamin, & bacon instead of pig.

    Having said that, I am carnivorous though I don't eat anywhere near the amount of meat I once did. I wouldn't eat horse meat. It would be too difficult to square with my sensibilities.

    My ex-wife had a horse. He was a thoroughbred but really was a bit of an ass. Though I did not ride him, I surely enjoyed him being a general curmudgeon to everyone who did. I wouldn't have eaten him. He probably would have given me a stomach ache.
