Recipe How? Potatoes O'Brien

    Roasting and baking are pretty much the same thing. Cooking things with a dry heat.

    Main difference is roasting is generally done to whole things -- vegetables and meats. Baking is about mixed ingredients being cooked (pies, casseroles, pastry, etc.)

    I always wondered what the heck "spotted dick" was!
     

  4. There is beef and vegetable suet. The random spotted dick could be opening up a whole new world to you.'
    The spotted part refers to fruit, and dick is/was a colloquial word for pudding.

    How many times have innocent gentlemen been castigated for offering pudding and women have judged them as offering willy. Poor chaps.

    Imagine your dinner guests gathered around the table, and their excited faces when you offer them your spotted dick :)

    In the case of potatoes, baking is generally putting a raw, skin on potato into a medium oven, but roasting is a peeled, often pre boiled potato in oil or hot fat in a hot oven.

    In England, at least.

    I forgot to take pics as they disappeared quickly, but I made potatoes o'brien for breakfast on Sunday. I microwaved some Russet potatoes for a few minutes until just cooked but still firm. While they were nuking, I cooked up some onion and pepper, as those two things cook at a different rate from the potato. I set them aside on a paper towel to drain. Once the potatoes were done, I sliced them up, fried them to perfection, then added the onion and pepper back in, and seasoned the whole thing.

    Next time, I wanted to use Yukon Golds.
