Greatest Samples
 
When I was younger, I hated sampling with a passion. The song that really really bothered me was "Ice Ice Baby" by Vanilla Ice, appropriating the "Under Pressure" sample from Queen. But now, I've grown to appreciate the creative use of a sample.

I think the best one so far is "Sunchyme" by Dario G, almost entirely based on "Life in a Northern Town" by The Dream Academy. This creates an entirely new song, and I prefer the new version to the old one.

Another one that creates a wonderful mood is "Doin Time" by Sublime, based off of "Summertime" from Porgy & Bess.

Finally, this ain't that musical, but collage sampling must be respected as well. "U2" by Negativland, primarily featuring outtakes of Casey Kasem.

I always liked Kanye's samples because it was the messages within the original songs that he seemed to be sampling simultaneously along with the beats. If I had to pick one, I'd say "Champion" which samples Kid Charlemagne by Steely Dan.

Yeah, pretty much the Amen Break.

I really like the Big Beat. I used it as the main beat in a Colbert Report remix I did. It's been used in a lot of popular hip hop these days.

There are so many incredible sample based artists now. Ones that go light years beyond what the general populous considers to be samples (like in hip hop or cheese techno samples)...
One of my favorite sample-based artists is Daedalus.

Here's a vid of Daedalus (feel free to skip past him talking)... really shows off his skill with live sample based remixing, and the audio is decent quality:

Animal Collective recently got the first legal sample of The Grateful Dead for there new song "What Would I Want? Sky." It's definitely worth a listen as you can't even tell what Grateful Dead song it is (it's Unbroken Chain) - they completely flipped it.
