Derek And The Dominos - Bell Bottom Blues (less overexposed compared to Layla)
George Harrison - If Not For You (way better than the Dylan version)
Bob Dylan - Sad-Eyed Lady Of The Lowlands (possibly the best love song ever)

Cool topic... it's harder than it looks cause a good love song should have both the lyrics and the music to go with it. I therefore choose as my number one, Paul McDermont's cover of a Hunters & Collectors, Throw Your Arms Around Me. Of note, it was purely lyrics, sabra cadabra and 16th Floor would tie for first.
