Ebay is probably one of your best bets......crashed bikes aren't the easiest to find since most that are crashed bad enough to get rid of the people that owned it usually die.

I'm overly observant... LOOK AROUND when you're driving through town. I was hunting mustang converts one day for a friend & thought, I need a bike. 10 minutes later I see this 1000cc Yamaha in a little fenced yard next to a tire shop or something, no For Sale sign, it had been sitting for a couple of months (?) but I wanted it. The guys wife wanted him to get rid of it (nice bike) becuase he had almost been hit. We had to jump it. The guy practically gave it to me. I drove it away!

Oddly enough, I found a site that has workable plans for powering a gyrocopter with a Triumph motorcycle engine. While I don't know torque and powerbands well enough on sportbikes, it would be simple to substitute any solid motorcycle engine into such a design. Trumpys were dead simple.
