Good/Healthy eating while always on the road
I work for the Union Pacific railroad and am always gone. Eating right is a major problem. I have looked into the low carb diets and they seem hard to do with my job. Any ideas for ways to eat right while working a really strange schedule? Strange being always on call and working different hours every day.

Eating right while on the road is hard. I pretty much cook 95% of my meals myself. If I was away from home I have no idea how I would eat right.

Eating right is very difficult, no matter what you do. If you eat out a lot (think fast food) go for sandwiches with lean meats and no mayo. Practically everywhere offers salads now too, which can be good. Most restaurants offer special menu's for low carb or low fat diets.
Learn your food facts. If you have the option, bring food with you. Yes, it means buying a lunch pail and spending 15 minutes the night before making your food, but it is worth it. You can buy healthy food that appeals to you and not be at the mercy of what is available. Usually, anything grilled (as opposed to fried) is a good bet. Fish and chicken are good choices. Remember that you need a certain amount of fats and carbs to keep you going. If you want to go low carb, look into the southbeach diet. Take an hour or two as soon as you get home from the grocery store and prepare some good food that you can take with you. Fresh veggies, broiled chicken, brown rice... you can combine them in so many ways and store them in the fridge for when you need them.
