I cooked up a Chicken Parmesan thing I like. I grill the chicken breast in a light olive oil, no bread crumbs. As it nears fully cooked I add some mushrooms and sliced onions. Once that's done I cover it in a marinara sauce and toss in some olives. My own secret recipe, says Prego on the jar but I add whatever fresh herbs I have handy. Today was basil and chives. Grate some fresh parmesan and nuke it for a minute to melt the cheese.
The result: So this and a small green salad with vinaigrette dressing was lunch today.

tully, that looks sweet..i may start taking pics of my lunch..although today's lunch wasn't visually impressive:
i made potato gnocci with a basil alfredo (low fat) sauce using ricotta cheese, parm, and chicken stock/flour/garlic..very tasty. potato gnocchi..easy enough to make, but far too easy to overcook...still, very tasty little potato pillows.. and i had a blackened chicken on olive focaccia with sauteed red onions and a chipotle drizzle. pretty tasty

Tully... looks very tastey! I have to take pics of my lunch. Althought today would have been problematic.
I heated up a home-made burrito (made with that tofu masquerading as ground beef) and ate it in the car as i was driving to the mall. Followed by an almond sweet & salty granola bar. Bought a short/bold coffee at Starbucks in the Chapter's bookstore, and headed back to work. Since they double cuped the coffee, I am now on a subsequent coffee, using the second cup. |

BBQ spareribs with pork fried rice and wonton soup. I know I shouldn't eat there because they use MSG and everything is so high-fat, but that deep purple syrupy sauce on the ribs is irresistible every once in a while.

I did a redux of yesterdays chicken parmesan. I always cook a couple breasts, does make sense to waste gas on one piece of chicken.
Tonight is dinner at friends, tomorrow will have to be something new.

mmmm...white castle....
lunch today: italian breaded chicken breast topped with caramelized onions and sauteed mushrooms, and topped with a slice of meunster, melted in the oven. served with cheesy grits. (closest i have to polenta right now)
