What's for dinner?

I was supposed to grill these pork steaks tonight, but didn't feel like standing over them. Lazy exhausting Monday.

I resorted to boxed mac and cheese, mixed in half a bag of frozen broccoli florets and a large pouch of tuna. The kids love it and it's quick and simple.

What are you preparing or what did you have for dinner tonight? If you've plans to be out, what do you think you'll be eating tonight? Tell the truth, now. :orly:

genuinegirly 12-10-2007 06:20 PM

I IMed T before he left work. Turns out he wanted canned chili for dinner. That made it easy on me. Put the chili in the microwave, it was warm for him when he came home. Made myself some pasta and sauce. Also made a big salad with green leaf lettuce, tomato, kidney beans, and mustard dressing. We shared that.

Seemed to work out fine. Wasn't anything fancy, but the fact that I opened a can for the guy seems to have made his day.

little_tippler 12-12-2007 07:00 AM

I will probably make some pasta with leftover grilled chicken, basil, mushrooms, parmesan and a splash of soy cream.

Yummy...damn now I'm hungry and I have hours to go lol

Fotzlid 12-12-2007 07:11 AM

nothing is thawed and there are no leftovers so we'll probably be eating out tonight.

fish_oinc 12-12-2007 02:50 PM

Left over roast beef I made Sunday but in a sandwich tonight and cheesy potato soup I'm making from scratch,
It's real easy
2 cup potatoes cubed
1 cup onions chopped
2 cups of water with chicken bullion cubes in it boil all together until potatoes are soft about 15 minutes

Put in a food blender until smooth add 8 oz of velveta cheese continue to blend, sprinkle with bacon bit if you like

Yum Yum

highthief 12-12-2007 02:53 PM

Quick dinner tonight - grilled cheese sandwiches along with beef/vegetable/barley soup. Hey, if my kid will eat it, it scores points.

Wow, Sorry - but if I fed that to my guy...he'd be like, "WTF did I DO WRONG to hafta eat THAT STUFF?".

Made some great homemade chicken noodle soup today (only because I had time and the ingredients.)

noodle 12-12-2007 04:04 PM

either reheating chili, beef and barley soup or spicy tomato-florentine soup (all homemade and then frozen) and possibly a grilled cheese and ham sandwich.

we've eaten out the last two nights and i want to stay home tonight. :(

Charlatan 12-12-2007 04:06 PM

I don't usually eat dinner.

World's King 12-12-2007 04:43 PM

I had Clam Chowder about an hour ago.

But that's not gonna hold me over for much longer. I might have to actually make something. I miss cooking in professional kitchen with someone else to clean up after me.

snowy 12-12-2007 05:18 PM

I'm not sure what's for dinner this evening...I'm not in charge of cooking tonight. So far I'm having a Deschutes Obsidian stout. Yum.

squeeeb 12-12-2007 06:42 PM

tonight was baked cauliflower with a mustard glaze, sauteed spinach with garlic, and cous cous

ring 12-12-2007 06:44 PM

World's King 12-12-2007 07:22 PM

I think I'm gonna go out and get a sandwich. I don't feel much like cooking.

ngdawg 12-12-2007 09:05 PM

Leftover Thanksgiving turkey with gravy and real mashed potatoes:thumbsup:

That's also gonna be tomorrow's lunch, so I guess I'm having leftover leftovers.

Plan9 12-12-2007 09:17 PM

BBQ chicken pizza. Roast beef and turkey pita rollups. 1% milk.

intecel 12-12-2007 09:19 PM

IdolGirl 12-12-2007 09:41 PM

ryfo 12-13-2007 01:32 AM

Grilled steak with mushroom sauce with garden salad consisting of lettuce tomato, red onion, spring onion, gerkins olives and low fat dressing. Quick, simple but really yum and didnt make the kitchen hot. It was 31 degrees centergrade here today.

Man that's sad. I talking about your guy saying that to you. I'll probably get into an argument with those type of people.

I only had some rice with veges and fish. All steamed. >_> Don't eat this at home, unless you can't eat fried food.

Way to resurrect the thread, Giant Hamburger! :-)

Tonight is Pizza night. Homemade pizza. I'm still perfecting by pizza crust recipe, but I'll share it when I do.

The sauce is this one: Recipes : Basic Tomato Sauce : Food Network

With some dried basil with the thyme, and fresh basil on top of the pies. Also I usually blend the sauce after it cools a bit, b/c the kids don't like chunks.

Toppings are whatever we have handy.

Huh, I was just thinking about what people eat for dinner, when I was washing the dishes today--was wondering if people tend to eat more nutritious dinners after having kids? Because ktspktsp and I skate by on meals that I would probably never feed our future children, but for some reason it's good enough for me. Go figure. I mean, when we weren't living together, I would occasionally eat cereal for dinner. Yeah.

Well, personally I can recognize in myself the fact that I use feeding people as a way to show love - I get a high out of cooking for my family and friends, and feeding them good food. When cooking just for myself, sure, sometimes I'll go out of my way and make something especially good, just because I enjoy the process of cooking, and like to eat yummy food. But other times I'll just have whatever's handy, because I don't want to take the time to make something elaborate.

The 'feeding people as a sign of affection' thing can be a bad thing sometimes, too...my wife, like a lot of people, will eat to deal with stress. Brownies or chocolate chip cookies when the kids have been a pain that day...

But, now she's trying to watch her weight, so I try to show my affection and support by cooking *healthy* food for her.

I have a 3 1/2 yr old and I must say that our cooking habits definitely changed once he was old enough to start eating real food. Before I wasn't real concerned with making sure to have a vegetable with every meal, but now it's a given. It is ironic that some of the stuff you eat, you'd never think about feeding your child.

We eat nutritious meals, period. My SO is a vegetarian (I'm sure many people here already know this) and so that kind of forces me to get creative sometimes, plus both of us need a balanced diet full of fruits and veggies to feel good, as I have a health issue that requires me to watch what I eat closely.

Last night I made caprese salad (sliced heirloom tomatoes, fresh basil, fresh mozzarella, drizzled with olive oil, seasoned with salt and pepper) and served it with Italian bread. Healthy, delicious, and super-easy.

Abaya, I imagine that living in Iceland it's not necessarily easy to get fresh vegetables for a decent price, and so I would guess that that is probably one of the factors limiting your ability to have a healthier dinner. I wouldn't really worry about it, because once you come back to the PacNW, there is so much fresh produce here you'll more than make up for it.

That's very true. Vegetables are almost a luxury item here. Definitely looking forward to the food shopping aspect of the PNW! :)

The bounty of the farmer's markets at this time of year is unbelievable. Our market currently has strawberries, marionberries, blueberries, raspberries, cherries, tomatoes of all kinds, greens of all kinds, fennel, potatoes, Willamette Valley sweet onions, garlic, sourdough bread, sausage, eggs, honey, jams, and on and on--all from the local area. It's amazing. Supposedly the peaches will start coming in this next week, though it wasn't a good year for peaches. Oh well. Getting on into fall the apples will start appearing, and so will the fresh cider. Yum. It definitely makes it easy to cook a healthy vegetarian dinner!

Cernunnos 07-29-2008 12:42 PM

Stir-fried beef and broccoli in a fresh basil tomato sauce over rice. :)

girldetective 07-29-2008 12:47 PM

No doubt it will be red wine and some sort of appetizer, or maybe a small pizza.

jewels 07-29-2008 01:54 PM

Grilled London Broil, leftover from last night, with sweet potato oven fries and turnip greens.

noodle 07-29-2008 03:44 PM

Salad made of spinach, sweet onion, and sungold grape tomatoes, plus black bean and rice soup. It was my guy's night to cook--we take turns.

A salad from Sonic :)

Willravel 07-29-2008 07:31 PM

Tonight I had roasted chicken cooked in apricot preserves with a side of raw carrots, steamed red potatoes, and raw onion sprouts. I had a cranberry juice and tonic to drink.
