Going old school for a second...
Micromachines was a great racing game. As was that arcade racer with the steering wheel and Indy cars.. And lastly, Excitebike was great, and have a track creator.. Quite impressive IMO.

Personally, I could never get into Project Gotham Racing. Incredible graphics but it was just too damn hard.

Midnight Club 2, I love this game, but the old Daytona USA was fun too. I never considered any of the GTA games racing games...

Don't get me wrong, I love my Xbox put I am sick and tired of not having the games to play. Midnight Club doesn't come out on the Xbox until June. When the Play Station 3 comes out in a year or two I am definitely jumping ship so I can play GTA's, MGS's, GT's, The Getaway, THe Devil May Cry, etc.

Realistic - Gran Tourismo
Arcade - Cruis'n World, Daytona USA, or Rush 2(Rush had an awwsome stunt level that was insane for 2 players) Other - Mario Kart I played a really good F1 game about 6 months ago, I wish I could remember the name.

Super Mario Kart for the SNES, definitely.
Although, Mario Kart 64 sucked royal ass. No matter how far ahead of the computer you got, they would always catch up to you, making it extremely aggravating when you made the tiniest of mistakes. Of course, there was always Rad Racer for the NES. Squaresoft's very first game, if I remember correctly.
