Pig Trotters

Hello all,
A friend has just slaughtered a couple of organically reared pigs and i want to try and cook the trotters.
Has anyone ever cooked pigs trotters before or even eaten them?
I have eaten them once before at a Ramsay place in London and they were very very good but I am slightly nervous about cooking them at home...
any advice?

they are the feet from a pig, 'the trotter.'
i have now cooked a couple and they were really good. skinned them and the boned them and stuffed them with a good garlicky french bread and mushroom stuffing and double roasted them...they were a bit fiddly to bone but tasted really good!

Sounds like a success. Wish I had friends that raised their own pigs.

There's a restaurant trend around here (San Francisco) to use more innards and unused parts. I had pig trotters a few time lately. It's hard getting past that cartilage texture, but they're pretty good.
