Now that we're on the far end of turkey leftover season, I'm just wondering how many different dishes people know of that make use of leftover turkey. I personally know the classic turkey sandwich, Turkey Joe (chunks 'o turkey sauteed with egg, cheese, spinach, onion, etc.), turkey and rice soup, and tetrazzinni, and turkey sundae (hunks of turkey with mashed potato and gravy and cranberry in a sundae glass).

What all do you do with leftover turkey?

my cats seem to enjoy 5-day old turkey... : )
