Peach Salsa
 
2 ripe peaches, peeled, pitted & rough chopped
1 small red bell pepper thinly sliced short
1 small re oind thinly sliced long
1/4 c. fresh chopped cilantro
1 medium clove garlic minced
1/4 c. pineapple juice
6 tbs. lime juice - about 3 limes
1 jalapeno pepper seeded & chopped fine
salt & fresh cracked pepper to taste

combine all in a bowl and refrigerate covered
will keep 3 - 4 days
great as a beef, chicken side or as a spread on fish

I've eaten something similar at a local restaurant. It was pretty good...don't know if it's the same thing or not.

if you have no peaches, mangos make a good substitute.. :)

Yup, I agree, mangos work well too. And if you don't have any juice for a sauce, just get some rasberry vinegrette.
