deconstructed pizza
i think i invented a deconstructed pizza, sort of, or at least a bowl of pizza, sort of.
i had some tomatoes laying around and didn't know what to do with them, so i cooked them up, put them in a bowl, made some quick flat bread to dip or scoop up and together it tasted like pizza, only it was in a bowl. pretty easy to make. cut tomatoes in half. salt and pepper tomatoes. then mince up garlic and put on top of tomatoes. then drizzle on olive oil and balsamic vinegar on them, (this order seems to work out best. the garlic keeps and holds the oil and vinegar on the tomato) roast them in an oven at 400 until they are shriveled and have dark spots, like a politician's heart. about 30 minutes. (you can go longer, and you might want to if you have the time and patience) take them out, put them in a bowl, add thin slices of parmesan cheese (i use a vegetable peeler) and some basil (chiffonade or rough chop). (you can add oregano or red pepper flakes if you want, put whatever you like in it, whatever tastes good to you). eat it with the bread you made while it was roasting. to make the bread, add pinch of salt to a 1/2 cup of flour, mix it and make a well in the center. add 1/4 cup of warm water, and a few drops of olive oil, mix it with your hand, knead it until you have soft, pliable dough (if its too soupy, add flour, if too dry, add water). divide it up into 4 balls, roll one out and put it in a hot pan. when it bubbles a small bit and gets light brown, turn it, and so forth and so on until it's cooked. repeat. sometimes it bubbles, sometimes it doesn't, do it a few times and you get the knack, it's pretty simple.

When I was younger, a chicken caesar salad was my version of a "deconstructed pizza", the olives, shredded parmesan cheese, croutons, and sliced chicken really melded right together to simulate that explosion of taste you feel from a bite of pizza pie. Alot crunchier, though, but still all good.
