this cake is so freakin easy and everyone will love you. (esp those on a diet.)

i bring this with me when i show up at summer bbqs. oh and a six pack of moosehead or pacifico.

take a watermelon and cut a huge slice out of it. you should have a large round piece about 3" high.

carefully slice off the rind trying to keep the round shape as much as possible.

using paper towels soak up all of the juice on the slice until it's fairly dry on the outside.

then fold i 6 oz or 8 oz lemon yogurt lowfat into regular or lowfat coolwhip to make a frosting.

frost the watermelon with the above mixture.

return to fridge and before you go top with small berries (blue or rasp) or edible flowers if you want to be extra fay.

carrying this cake in or knowing how to make it will not score you any points in the macho category, but if that bothers you then you're not really macho anyway.
