Recipe of the Day - June 14 (burrito pie)
 

Burrito Pie

Ingredients
1/4 cup salad oil
4 8" flour tortillas
1 can refried beans
1 small garlic clove
1 cup chopped lettuce
1 medium tomato, chopped
1/2 pound beef
1 medium onion, diced
1/3 cup taco sauce
1/2 tsp. salt
1/2 pound Monterey jack cheese, shredded
black olives
green chilies

Preparation
Over medium heat, heat oil. Fry tortillas for 30 seconds on each side.

Remove and drain oil.

Preheat oven to 350.

Over high heat cook meat, onion and garlic. Remove from heat and stir in green chilies, beans, taco sauce and salt.

In a pie plate put a tortilla, top with 1/4 bean mix and 1/2 cup cheese.

Repeat 3 times.

Bake 30 minutes. Sprinkle with lettuce, tomato, and olives.
