Ghosts & Goblins theme, or the funky Maximo remix thereof, the orchestra version of the Zelda theme from Wind Waker, and most anything from Gitaroo Man. There was also a certain song from the first Ninja Gaiden I really like, but if it has a name I don't know it. It played in the level after Jaquio dropped Ryu into the dungeon, and also during the end credits.

Edit: Still don't know the name of that NG song, but here's a pretty good remix- not quite as fast and frantic as the original, but still damn good: http://www.ocremix.org/detailmix.php?mixid=OCR00713
