For MACH 2 combat, you may want to wait for LOMAC release, which is hopefully soon. A demo has been released already.
Look into Falcon 4.0 or maybe Jane's F/A-18, older titles but there's a lot of 3rd party developers keeping them up to date.
For WW2 era try Il-2 Forgotten Battles. IMO one of the best WW2 Combat flight sims out there. It's all I really play anymore.
There's quite a few user made movies out there. If you want I can post a few links so you can see the game in action. There's some really fantastic work out there. Sometimes it's hard to believe it's a game.
