There are some incentives. There are little hidden things throughout the game, some hard unique jumps you keep trying until you get right (and you don't mind trying because they're so fun just to watch), and for me, I always try to create a goal for a trick of some kind. For Vice City my goal has been to pull off a 360 backflip, a virtually impossible stunt because Tommy can't lean back all the way, so I finally found in the western most island there is one jump where the peak of the jump skims a roof. So, after about 500 tries, I finally pull it off, but nail a building and don't land it, another 500 tries, I actually land it and ride off, and I've never been able to do it again.

One day an Englishman, a Scotsman, and an Irishman walked into a pub together. They each bought a pint of Guinness. Just as they were about to enjoy their creamy beverage, three flies landed in each of their pints. The Englishman pushed his beer away in disgust.
