Fire-eaters of the world unite
I've been cooking for several years now, and I think Cajun food is still my favorite food to cook. I have all of Paul Prudhomme's cookbooks, and now I can make killer jambalaya and gumbo. But it has to be really spicy. I usually double/triple the peppers and chile that the recipe specifies. All you other fire-eaters out there post your faves.
