I consider cheating a sexual experience that is done without knowledge by the other person in a relationship. In my mind, if two people are getting off simultaneously, even if it is not physical; it is close enough to be consider sex.

Is your girlfriend aware of how you define cheating? Do you know how your girlfriend defines cheating? I would suggest finding common grounds on what is/isn't cheating and then work from there. Other people's definitions of cheating vary so much and are for different relationships that no one else's meaning could/should apply to your own. You and your girl need to define what cheating is for you two in your relationship. The definition usually changes from relationship to relationship. Set the boundaries. Be fair; avoid double standards.

Previous to tfp, I used to frequent a different message board where monogamous relationships were in the minority. I'm kind of surprised (though I shouldn't be) at how extremely strict the definitions have been in response to your post. And yes, there is a such thing as cheating in an open relationship. If you cross boundaries that have been set, that's cheating. These boundaries are so very different which is why I stress the fact that you two need to come up with your own individual rules for the relationship instead of relying on how others define cheating.
As for porn vs. cyber. You cannot meet with porn in real life (at least it's very unlikely), so it seems like comparing apples and oranges.
Don't know if this helps at all...
