Indian red curry from a paste. Went to the asian market friday and picked up some items.
Cooked the paste in veggie oil for a few minutes, added coconut milk (1 can 13.5oz) and added all the veggies. Brought it to a boil and turned it down to simmer. Cooked white rice with curry powder, cumin, garlic powder, onion powder, black pepper and salt.
