1 and 1/4 cups finely chopped almonds (almond meal)
1 cup Splenda
1 egg
1 tsp vanilla
1/4 cup softened butter
Mix all well and place in small balls on a lightly greased cookie sheet. Press flat (1/4" thick) and bake at 350°F for 8-10 minutes.
Per Serving (excluding unknown items): 43 Calories; 3g Fat (54.6% calories from fat); 3g Protein; 2g Carbohydrate; 0g Dietary Fiber; 11mg Cholesterol; 16mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 1/2 Fat.

This is a modified version of the "Almond Cookies From Desire" recipe on
CARB-LITE. I just made them earlier, and they are definitely tasty if you like almonds.
As noted, instead of almond meal I took "a few handfuls" of unsalted almonds and ground them up in a small chopping-appliance. I used this as the almond meal, and placed some slivers of almond on top to decorate.
