Poached eggs (medium) with toast, hash browns and bacon. Served with coffee.
this has been my fav for years but recently I went to a local restaurant (Fran's in toronto) and had some corned beef hash. I love this stuff. Simple enough to make at home:
- peel and chop 4 medium sized potatoes into 1 inch-ish cubes
- microwave in a covered bowl for 5 mins, stirring every two mins
- fry in butter (okay, I've used canola oil too) in a large frying pan, with one chopped onion
- keep frying until the potatoes start to get crispy (about 5 mins on medium-high)
- meanwhile, open a can of corned beef (the kind with the key)
- slice beef, then chop into 1 inch-ish sized cubes
- add to the frying potatoes & mix in with pepper to taste (note: this meal doesn't require any salt to be added)
- smooth down the mixture with your spatula, and allow the bottom crisp up.
- flip over to crisp up the top
- tip into a bowl when cooked to your personal preference
- eat with more pepper or ketchup and eggs.
