I hate to say it, but if you don't like Vegas, it's not the city that is too blame. Yes, it would get tiring if you lived there, but I like visiting. If I have no money, I can keep entertained. (Last time I went I got into the pool at Bally's for free, saw the Miss Universe girls, went to the LAX nightclub until 1am, and found cheap drinks at the Mexican restaurant in Bally's). If I have money to burn, the city is setup to take it from me. But what happens in Vegas is supposed to stay in Vegas.
The Grand Canyon and Valley of Fire state park are great places to see, but they are far away, unless you take the helicopter ride.
