Mom's an ok cook. I asked her about meat resting and she said she didn't know what the point of it was. Now I know. I made a similar recipe of hers for meatballs the other day. It always seemed hers were bread-y or something. Well I cooked mine for half the time and they had the texture a meatball should have. She was overdoing them. I let her know - her reply was 'maybe you'll be a good cook after all!'
