I've done the coffee thing and a few others.
Shiso.
Thai Chili.
Raspberry.
Lemon.
Thai Peppercorn.
Cardamom.
Salt, Sugar, Cayenne.
If bacon can be done, why not my other meat favorite, duck confit?
