Cyn has it right... make it for four and freeze it. You now have lunches and dinners for later in the week.
one of my favourite is a simple pasta dish...
Get some pasta into some boiling water.
While it is cooking, sweat some onions and garlic and red chilies in a frying pan (don't brown them). Add some cherry tomatoes and cook them until they soften.
Add some cream and stir it all together.
Add some cooked prawns (or cooked chicken pieces, if you wish)
Take the pasta out of the water just before it reaches al dente and add it to the pan. Stir for a little bit (a miniute or two).
Serve immediately.
Dead simple.
