I've been making more nacho salads which is a healthy spin on the favorite.
Brown ground beef or turkey with garlic and onion.
Heat black beans with chili powder, red pepper, cumin, and a couple splashes of tabasco sauce. (I drain and rinse the beans before cooking to lower the sodium)
Salsa: Chop roma or beefsteak tomatoes, onion, and cilantro. You can also add garlic or lime.
Mix beans and ground meat.
What you do from here can vary.
You can pour the beef/bean mixture over the chips and add grated cheese and broil. Top with salsa and other toppings.
You can put the beef/bean mixture over a Romaine lettuce and top with salsa and other toppings. Serve with the chips.
Also, I like to try different chips. Lately, we've been having multi-grain chips which are good with the hearty meat topping.
