The last time I converted from VHS to DVD, I used a cheap 'Snappy' unit (like $50) that basically just plugs into your USB port, and has both coax and RCA for input. Through the snappy software, just click 'Begin' and hit play on the VHS, and it starts recording. The quality was better than I thought it would be, but you can still tell it came from a VHS tape.
You can find cheap video input boxes at any computer store.
