I love this dressing, too, and in addition to putting it on salad, I really like a little of it on grilled salmon.
When I was growing up, my family ate salad with the meal. We never went out to dinner, so until I got out on my own and starting going to restaurants I didn't realize that most restaurants in the U.S. serve salad before dinner. Eventually when I went to "classier" restaurants in the U.S. and some restaurants in Europe, I first had salad after the main course ...I think to cleanse the pallate. This last way makes the most sense to me and I find is most satisfying as part of a full multi-course meal.
