I'd love to try bungee jumping. The "bounce" would be a real shocker.
My last few dozen experiences with heights consisted of myself, 100+ pounds on my shoulders, and the door of a plane at 1000 feet in the middle of the night.
I think dating is safer. Yeah, it'll be worth the wait... but I loathe waiting.
