A simple, straightforward, tasty, filling dish.
Ingredients- two tablespoons olive oil
- two cloves garlic, minced
- 28 ounce can whole peeled tomatoes
- 1/2 cup basil
- salt, pepper to taste
- 1 /4 cup vodka
- one pound penne
- one pint heavy cream
- chicken breast, cut in strips (about 1/2 per person, optional)
- In a large skillet over medium heat, cook garlic and chicken (optional) in olive oil until tender. Stir in tomatoes, breaking up a bit with fork*. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Stir cream into sauce and cook 10 minutes more. Toss with hot pasta.
*if you don't feel like breaking up the whole tomatoes, you can use a can of minced tomatoes. 12 oz, I believe.
