I use iTunes for audio and ripping CDs. iTunes doesn't put any DRM on the stuff you rip from CDs. You do have to go into the settings and tell it rip to MP3 format instead of AAC though. Only the songs you buy from the iTunes Music Store have DRM on them.
For video, I still use a combination of Windows Media Player/Quicktime/Real Player. I haven't found a player that can handle all of the different formats while still being stable.
