Winamp or XMMS for audio
VLC or BSPlayer for video
I don't think I need to explain Winamp or XMMS. VLC is great because it's very lightweight and can play pretty much anything, even if you DON'T have the codecs installed. It is also great for watching video with AC3 5.1 audio. However, I use BSPlayer when I can because of two things. Primarily, I dislike that VLC doesn't support using the arrow keys to jump ahead and behind at small increments. Less importantly, I like the aesthetic of BSPlayer: the video "window" is all by itself with absolutely nothing around it, and the mouse's scrollwheel can be used to zoom in and out in small increments.
