Windows 2003 server allows you to set up a domain server and then manage that domain. As far as which version is best, it depends on what your needs are. The thing you have to remember with your demo copy is it's only good for 180 days. So unless you need to test it for some reason, or just want to format and reinstall in 6 months, I wouldn't worry about it.
You can use Win2k3 for running your website, but if you are using IIS, Microsofts web server software, make sure to stay on top of the security fixes and patches.
