I don't know many *songs* that do this, but I can give you some albums/mixes. Paul Oakenfold specifically.
For the "intro, build up, climax, outro" I HIGHLY recommend "Tranceport" by Paul Oakenfold. Once the album reaches the 25 minute mark you are ready to fucking tear the house down (especially once "Someone" kicks in). Good stuff. If you have a subwoofer, turn it on.
Something that has good structure: The Essential Mix Live at China by Paul Oakenfold. You will dig this big time.
