I say dooku.
in response to wiilravel above-
DO NOT READ THIS IF YOU VALUE THE EXPERIENCE OF WATCHING STARWARS WITHOUT KNOWING WHAT'S GOING TO HAPPEN.
Spoiler:
" Anikin defeats Dooku by beheading him with two lightsabers (the red lightsaber is later adopted as Vader's , and the blue becomes Luke's). Dooku being dead, Grevious becomes the lead seperatist under Sideous. This leads me to believe that Dooku, despite being the padewan of Yoda, is far from the great and powerful Jedi he is made out to be in Episode II. "
Yeah, well, Anakin does this right in front of the "kidnapped" Palpatine.
Maybe Palpatine wanted Anakin to win, and had a hand in the fight, so to speak.
For what it's worth:
In the novelization, (DAMN I'm a nerd!!!) the reason Dooku is so hard to defeat is that he fights in the old style, more like fencing, than the swinging style of the two jedi. The new style is effective against blocking off blaster blasts, or whatever, but the fencing style is far better against other light sabers. Remember how Dooku's light saber looked different, curved handle, etc.. -well, that was what was originally planned, but they supposedly changed it because it didn't look as good on screen.
