Check out CDex
http://cdexos.sf.net . I would stay away from iTunes if I were you. iTunes is good for listening to music, but importing your CDs in MP3 format uses Apple's MP3 encoder, which AFAIK is the worst encoder out there.
CDex OTOH uses LAME. :-)
