Seriously, though, we do all sorts of stuff. Economic Impact work, SEIAs, etc.
Areas: Oil and Gas industry, Fisheries, Aquaculture, Forestry, Community Economic Development, Tourism...
Types of Analyses: Project Evaluation and Assessments, Economic analysis, Market analysis.. basically anything that government and industry needs done that they don't want done in-house. More and more, this type of work is outsourced or strategically carried out by a third-party to avoid conflict of interest issues.
Depending on what sort of economics you're interested in (i.e. heavy theory or practical micro/macro stuff), there are plenty of opportunities, especially in Canada. Heck, the economics of the Oil and Gas sector in Calgary and southern Alberta should keep you pretty damn busy. I could probably look up and give you some company names if you'd like to call someone and ask what it is they do.
